pistachio paste: 1 cup

egg yolk: 4 pcs

sugar: 3/4 cup

high-fat cream: 2 cups

milk: 1 cup

salt: 1/8 tablespoon

vanilla: 1/2 tablespoon

almond extract: 1/2 tablespoon 

How to prepare: 

In a powerful blender or mixer, pour the pistachio paste and 1/4 cup of sugar and mix well (try not to mix too much, as you do not want to turn it into butter).

In a large pot, combine high-fat cream, milk, remaining sugar and salt and put the mixture on heat until it starts to bubble.

Pour the pistachio paste and sugar mixture into the pot.

In a large bowl, whisk the egg yolks.

Gently pour a cup of the creamy mixture into your egg yolk and stir constantly. Add another cup of cream mixture while stirring.

Pour the egg mixture together with the remaining cream mixture into the pot and heat for about 5 minutes until the mixture thickens a little,so that it sticks to the back of the wooden spoon.

Add almond and vanilla extract and stir.

Place the bowl inside a container full of ice and let aside for about 10 minutes. Stir occasionally.

Cover the bowl and put it into the refrigerator for about 2 hours.

After cooling, pour the mixture into your ice cream maker and let it work according to the instructions (about 30 minutes).

Pour the mixture into a bowl and put in the freezer for 6 hours.
